Jim, The creamy pastina w/ the meatballs makes it for me. However, I have had good Wedding Soup w/o the pasta. That leaves making the meatballs w/o any bread. I had an aunt who didn't use any bread or crumbs in her meatballs. They were pretty fucking good. She was heavy on the pork..on mean in the meatballs.

It has meatballs in it as you well know Nick.
It is a challenge to make it gluten free.
My mom used to make it during the holidays. I don't know why it is such a challenge. Just make it with gluten free pasta
BTW its known as Italian wedding soup. Leave the cake out that should make it gluten free
