Old school folks know. It's a perfectly good, healthy part of a beef.
A few years back I was going to buy some beef tongue and have it smoked. It was 3 bucks a pound and thought that's an awful lot for offal and decided to wait. Last I saw it's between 8 and 9 dollars a pound.
Old joke:Women goes to a restaurant, asks the waiter what he recommends.Waiter says "Beef tongue"Woman says "Ew, I don't want anything that's been in an animal's mouth, I'll have eggs, instead."
I eat lengua tacos @ a great taco stand in San Diego. Pickled lamb's tongue is big in New England bars.
