So I read the blurb on Clooney's añejo (aged) tequila and noted that it has vanilla notes. That got me wondering about the source por flavor.
Obviously, the flavor doesn't come from vanilla beans but instead it is found in lignin (wood). So it comes from the barrel via chemical extraction in the aging process. Vanilla notes are found in many spirits and wines and they all come from close contact with wooden barrels.
