And I always considered the bone to be an extra nuisance. But now I realize from that picture its importance to flavor because the boneless are not as satisfying, not even to look at.

That looks good, even if it may involve a relative.
I wouldn't put a barrier between meat and the flame but I think my brother in law is looking to postpone the cleanup... that's my speculation.
