Epicurious: Pancakes

They all look good to me.



Steven said nobody likes maple syrup.

That makes me wonder if he's ever had the real thing.

One time at a Mexican restaurant, El Tejado, muy autentico, we ordered sopapillas, triangular doughnuts. The honey comes in miniature pitcher-like containers. I assumed it was real honey but everyone at the table insisted it's fake honey. 

Fake honey!

What a ripoff.  

Totally faked me out.

I am in favor of a simple pancake, no fruit or chocolate or any such stuff. The pancake itself, with butter and real maple syrup, is awesome.

Bacon is great, but on the side, please!

Also, the latter two who used butter made a couple of mistakes that are common. Pancakes are best when they are HOT. So, keep them hot if you aren't serving them immediately; I put them in a warm oven. Put them on HOT plates; and then inebriate them with melted butter and hot syrup. Otherwise, you're taking something that you want hot, and putting it together with cold ingredients. Don't put cold butter on hotcakes, put hot butter on! In fact, I melt butter and syrup together and just pour it on.

Fake honey has been around awhile. Honey flavored corn syrup from China. You got to watch the cheap stuff.

Real maple syrup is a gift from God. It's what makes pancakes great. Anything else is not the same.

I am fine with all sorts of pancakes (flour, buckwheat, nutflours, etc.). You need to know how to properly control heat and levening additives with each one to get the perfect pancake-- crispy edges with fluffly middle.

I do like blue berry pancakes.
