Here's a better video I saw after I posted this one.
Three layers, one with coconut milk, better fruit, more vivacious and playful and interesting cook. I love this woman. I subscribed to her channels and watched all her videos.
I think I'll try making my own agar agar from its raw form. I have a few packages of it in clumped strings. They soak into transparent noodles. If I break them up and process them in a coffee mill I'm certain they'll turn into powder. The package is about 18" long, but Amazon sells all types, powder and flakes.
Too cool. How does agar agar compare in taste to gelatin, I wonder.
Also:
"An agar plate is a Petri dish that contains a solid growth medium, typically agar plus nutrients, used to culture small organisms such as microorganisms. Sometimes selective compounds are added to influence growth, such as antibiotics.[1]"

I'd try making that.

Is it jiggly?
I think it's a little more rigid than gelatin. If you use a lot, then it turns into Gummy Bear.
