Chicken Parmesan
I had a Mexican version of this that was the best thing I ever put in my boca.
Well, okay, maybe not the Mexican version of this but it was this exact same idea except totally different.
The restaurant took a large roasted poblano pepper and stuffed it with a flattened and fried chicken breast and poured crema over that.
I stole that idea.

I'm a bit of a Ree Drummond fan. She really has made the big time. I forget how I first found her - perhaps an Insty link? Anyway I own one of her cookbooks and it's great for the not so confident cook. (me) Lotsa charm and helpful photos.

The whole celebrity chef thing is so overrated. You cook food for fuck's sake. There is nothing mystical here other than the fact that somehow, the food/restaurant industry somehow, someway collaborated together to call or rebrand mayonnaise as Aioli. Pisses me off.
